The Aji Amarillo pepper is native to South America and a staple in Peruvian cuisines. This pepper is the largest of the Aji pepper family, reaching a length of 4-5" long!
Aji Amarillo pepper plants grow to be sturdy, 3 ft. tall plants and are very productive. These pods are longer than other , maturing from green to bright orange with thick flesh and shiny, smooth skin.
The Aji Amarillo is BURSTING with an amazingly fruity, almost berry-like flavor. The heat is no joke either, coming in at a mere 30,000-50,000 SHUs. Its most common appearance in Peruvian culture is in the form of a paste, but can be found used in a handful of Spanish dishes! Such a fantastic pepper and very versatile!
